Healthy Banana & Oat Cookies

With all the hustle and bustle of a busy life it’s hard to eat health all of the time and most of the convenient snacks that we reach for can complete destroy our healthy eating efforts, in just one bite. But, I recently discovered a super easy, 2 ingredient recipe for making gorgeous and healthy cookies. Yes that’s right, healthy cookies! And, they are so easy to make that they make baking with kids a breeze.

If you are like me and sometimes forget to eat breakfast, well them these are a perfect addition to your morning coffee. They can be baked the night before and eaten on the go. You also have the peace of mind that your child is eating healthy while having a treat. If your child is a fussy eater, try these… kids love cookies!

Ingredients:

  • 2 large ripe bananas
  • 1 cup of oats (quick oats work best)

Suggested add-ins:

  • ½ cup chocolate chip
  • ½ cup crushed walnut pieces
  • Pinch cinnamon
  • ½ cup raisins
  • ½ cup coconut desiccated
  • Tbls sp. Peanut or almond butter

Preparation time:

  • 5 minutes

Method:

  • Mash both bananas in a large bowl
  • Stir in the oats
  • Add any desired extras
  • Place into non-stick (or lightly oiled) baking tray

Baking:

  • 180 degrees C (350 degrees F)
  • 15 minutes

Keep them interesting:

Like with all foods we can grow bored of eating them so Seán and I like to mix up the suggested add-ins with these tasty combinations:

  • Chocolate chip & raisins
  • Crushed walnut pieces & cinnamon
  • Peanut butter & cocolate chip
  • Almod butter & coconut
